When we were four, one simple way to tell the twins apart was that Lyssie claimed to love cabbage — though Tammy loved it too. Even now, cabbage remains a staple for us. If you peek into our shopping carts any day, at least one of us will have a purple cabbage. More often than not, we’re making our Colorful Detox Salad, but when we don’t have cabbage on hand we’ll pull together other veggie favorites like the Kale Recharge Smoothie or Caramelized Cauliflower with Olive Oil and Lemon Juice.
We were thrilled when our rock-star client Jeane shared a quick cabbage idea her whole family adored. It took her just five minutes — easy, fast, and delicious. Not soggy, just crispy, crunchy, and fresh. And one generous cup has only 26 filling calories.
Easy, Crunchy Braised Cabbage
Serves 3
Ingredients
3 generous cups chopped cabbage
2–3 tablespoons water
Fresh cracked pepper
Juice from a lemon
Garlic (optional)
Sea salt, to taste (optional)
Microwave-safe bowl
Directions
Cut the cabbage into chunks and place it in a microwave-safe bowl with 2–3 tablespoons of water. Cover the bowl and microwave for 4–5 minutes, or until you notice a fragrant burst of aroma. Let the cabbage rest on the counter for 10–15 minutes so it continues to steam and finishes cooking gently. Finish with lemon juice, a squeeze of garlic if you like, and fresh cracked pepper. Season with sea salt if desired. Serve warm or at room temperature.
