Raspberry Champagne Granita

- 375 mL water
- 100 grams granulated sugar
- 20 frozen raspberries or strawberries or blackberries
- 750 mL chilled champagne or prosecco
- 15 mL fresh lemon juice

In a small saucepan, combine the water, sugar, and frozen raspberries. Heat over medium-high, mashing the raspberries as they warm to release their juices. Bring to a boil, then remove from heat and strain the syrup into a large heatproof bowl. Press on the solids to extract as much flavor as possible. Chill the syrup for about 1 hour or until completely cool.

Stir the cooled raspberry syrup together with the chilled champagne (or prosecco) and the lemon juice. Pour the mixture into a 9×13-inch (23×33 cm) baking dish or similar shallow pan and place it in the freezer for 1 hour.

After the first hour, use a fork to scrape and stir the slushy edges into the center, breaking up any large ice clumps. Return the pan to the freezer and continue to stir and scrape every 30 minutes to encourage fine, flaky ice crystals.
