
Some food trends fade quickly, but the baked feta pasta craze became a permanent favorite in our home. I prefer a twist on that recipe using soft, creamy brie instead of feta. My kids haven’t warmed up to sharp cheeses like feta or goat yet, but they love brie.

Although brie rind is edible, it can become rubbery when baked and leave unpleasant bits in the pasta. A vegetable peeler works well to remove the thickest part of the rind without wasting the soft cheese inside.

I tested this recipe using only brie and parmesan at first, but it needed a little savory brightness. A tablespoon of capers added the perfect salty, tangy note.

Baked Brie Pasta

Ingredients
- 1/4 cup olive oil
- 30 oz cherry tomatoes
- 10 oz Brie rind removed
- 1 tbsp capers
- 1 lb pasta
- 2 tbsp minced garlic
- 1 cup grated parmesan cheese
- 1/2 cup pasta cooking water
- fresh basil for garnish
- salt and pepper
Instructions

Preheat the oven to 425°F and position the rack in the middle.

Drizzle 1 tablespoon of olive oil in a Dutch oven or ovenproof dish. Place the brie in the center and arrange the cherry tomatoes around it. Drizzle the remaining olive oil over the tomatoes and sprinkle the capers on top.

Bake uncovered for about 35 minutes, until the tomatoes are blistered and the brie is lightly browned.

While the cheese and tomatoes bake, bring a large pot of salted water to a boil. About 10 minutes before the bake finishes, cook the pasta until al dente. Reserve 1/2 cup of the cooking water, then drain the pasta.

Remove the dish from the oven. Add the minced garlic and grated parmesan to the hot tomatoes and brie. Stir vigorously with a spatula, breaking up the tomatoes and mixing the melted brie into a creamy sauce. Add reserved pasta water a little at a time until you reach your preferred sauce consistency. Season with salt and pepper to taste.

Toss the drained pasta into the sauce until well coated. Serve topped with extra grated parmesan and fresh basil leaves if desired.
