Description

Ingredients

  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 1 yellow onion, small diced
  • ½ cup small diced mushrooms
  • ½ cup finely shredded carrots
  • ½ pound mild Italian sausage
  • ½ pound lean ground beef
  • 1 28oz. jar of tomato sauce
  • 2 tablespoons Italian seasoning
  • 4 cups baby spinach
  • 1 cup cottage cheese
  • 10 lasagna noodles (broken into thirds)
  • ½ cup parmesan
  • 1 cup mozzarella

Instructions

  2. Add the sausage and ground beef, breaking the meat up with a spoon. Cook until the meat is browned and cooked through.
  3. Pour in the tomato sauce and add the Italian seasoning. Stir to combine, then add the baby spinach and cottage cheese, stirring until the spinach wilts and the cottage cheese is incorporated into the sauce.
  4. Stir in the broken lasagna noodles, pushing them down so they are submerged in the sauce. Reduce the heat to medium-low, cover with a lid, and simmer until the noodles are tender, stirring occasionally and adding a splash of water or broth if the sauce becomes too thick.
  5. Once the noodles are cooked, sprinkle the parmesan and mozzarella over the top. Cover briefly to melt the cheeses, then serve hot.
