Ingredients

  • 2 cartons or bags pre-chopped butternut squash
  • 3 TBSP butter (salted or unsalted)
  • 3 TBSP olive oil
  • 1 onion, diced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cardamom
  • 3 cups vegetable stock
  • 1/2 cup crème fraîche (feel free to be generous)
  • 1 sprig fresh rosemary
  • 1/2 jar roasted red peppers
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toss the squash with olive oil, salt and pepper. Roast 30–40 minutes, until soft.
  3. Puree the roasted squash until smooth.
  4. In a soup pot, sauté the diced onion in butter until translucent and fragrant.
  5. Add the pureed squash, the dry spices (nutmeg, ginger, cardamom), and the vegetable stock. Stir to combine.
  6. Bring the soup to a boil, then reduce heat and simmer for 15–20 minutes to let flavors meld.
  7. Stir in the crème fraîche and add the rosemary sprig. Simmer briefly to warm through and infuse the herb flavor.
  8. Puree the roasted red peppers until smooth to make a quick coulis, then season to taste.
  9. Remove the rosemary, adjust seasoning, and serve the soup with a drizzle of red pepper sauce on top.
