Ingredients

  • 11 1/2 cups unsweetened almond milk
  • 1 scoop vanilla protein powder (optional but recommended)
  • 1/2 cup roasted winter squash (butternut, pumpkin, or kabocha; see notes for roasting tips)
  • 1 cup steamed and frozen cauliflower
  • heaping 1/2 cup frozen mango
  • 1 TBSP peanut butter or sunflower seed butter
  • dash of cinnamon

Optional toppings

Instructions

  1. Add all ingredients to a high-speed blender. Pulse and blend until smooth and creamy, scraping down the sides as needed.
  2. Adjust consistency: add more almond milk for a thinner bowl, or add more frozen cauliflower or winter squash to thicken.
  3. Pour into a bowl, add desired toppings, and serve immediately.

Notes

Time listed does not include roasting time for winter squash. If you don’t have roasted squash on hand, plan 30–60 minutes for roasting depending on size.

Roasting tip: Preheat the oven to 400°F (200°C). Wash the squash, halve it lengthwise, and scoop out seeds and stringy pulp. Lightly coat the cut sides with oil, place cut-side down on a baking sheet, and roast for 30–60 minutes until tender. Let cool slightly, then scoop out the flesh and freeze or use fresh in the smoothie bowl.

Substitutions: Use oat milk or another plant milk instead of almond milk. Swap almond butter or tahini for peanut or sunflower seed butter to change the flavor profile.
