- 3 TBSP butter (salted or unsalted)
- 3 TBSP olive oil
- 1 onion, diced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/8 teaspoon cardamom
- 3 cups vegetable stock
- 1/2 cup crème fraîche (feel free to be generous)
- 1 sprig fresh rosemary
- 1/2 jar roasted red peppers
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Toss the squash with olive oil, salt and pepper. Roast 30–40 minutes, until soft.
- Puree the roasted squash until smooth.
- In a soup pot, sauté the diced onion in butter until translucent and fragrant.
- Add the pureed squash, the dry spices (nutmeg, ginger, cardamom), and the vegetable stock. Stir to combine.
- Bring the soup to a boil, then reduce heat and simmer for 15–20 minutes to let flavors meld.
- Stir in the crème fraîche and add the rosemary sprig. Simmer briefly to warm through and infuse the herb flavor.
- Puree the roasted red peppers until smooth to make a quick coulis, then season to taste.
- Remove the rosemary, adjust seasoning, and serve the soup with a drizzle of red pepper sauce on top.
