How to Make a Buttercream Ruffled Flag Cake
Piping buttercream ruffles is surprisingly easy and creates a beautiful textured finish.
- For this tutorial we used a 6-inch double-barrel (tall) cake so there was plenty of space to decorate the sides, but the design adapts well to any cake size or a sheet cake.

Double Barrel Cake
Double-barrel cakes are tall cakes split midway with a cake board and supports, essentially two stacked tiers of the same diameter decorated as one. For this cake we used four layers with a cake circle halfway up and straw supports beneath the board for stability.
- We frosted with a fluffy vanilla buttercream suitable for piping, though a classic vanilla buttercream works just as well.
- After smoothing the frosting, I filled the sides with patriotic words and phrases using a small round piping tip (Wilton tip 2). The lettering can be loose and informal — the goal is to fill the space with meaningful words and a few stars or hearts.
- If lettering feels intimidating, replace it with polka dots or piped stars for a similarly festive look.

- To create the blue canton (the blue square), I used a star tip (Wilton 21) and royal blue buttercream, piping a rounded, pie-shaped section so it fits the top of a round cake.

- Next add the ruffled buttercream stripes. I used a petal tip (104) to pipe rows of red and white ruffles. Position the petal tip with the thin edge facing down, and work from the bottom of the cake upward, slightly overlapping each row for full coverage.

The ruffles are quick to pipe and give a lovely, tactile look. We ended up with 13 stripes, but you don’t need to count precisely — adjust spacing to suit your cake and preference.

I finished the blue canton with small white dots piped using a tiny round tip to represent stars, and added a few polka dots elsewhere for extra charm. The whole cake comes together fast and makes a festive centerpiece.

This flag cake was quick to assemble and remains one of my favorite patriotic designs.

How to Make a Ruffled Flag Cake Design in Buttercream
This patriotic ruffled buttercream flag cake is easy to make with simple buttercream piping. Follow the step-by-step instructions below to recreate the look.
Materials
- Decorated as a double-barrel tall 6″ cake, but adaptable to other sizes.
- Vanilla frosting — a crusting vanilla buttercream is recommended for stability while piping.
- Coloring gels: red and royal blue (Americolor or similar).
- Piping tips: small round tip (2), petal tip (104), and star tip (21).
Instructions
- Frost the cake with vanilla buttercream and pipe patriotic words around the sides using a small round tip. If you prefer, use polka dots or fondant stars instead of lettering.
- Use a star tip (21) with royal blue buttercream to pipe a pie-shaped canton on the top left of the cake.
- Using a petal tip (104), alternate red and white buttercream ruffles. Start at the bottom of the cake and work upward. Hold the petal tip thin edge down and move it up and down in horizontal rows to form ruffles. Practice on waxed paper if needed.
- Overlap each ruffled row slightly with the previous row to ensure full coverage.
- Add small white dots on the blue section with a small round tip to suggest stars.
