How to make pancake batter

The pancake batter is quick to make and forgiving. The keys are to combine wet and dry ingredients gently and to avoid overmixing so the pancakes stay tender:

  1. Sift flour, baking powder, sugar and a pinch of salt into a bowl.
  2. Whisk the egg, milk, melted butter and vanilla together in a separate bowl.
  3. Pour the wet ingredients into the dry and stir until just combined; a few small lumps are fine.
  4. Rest briefly if desired; do not over-whisk or the batter will become tough.

How to cook Nutella pancakes

Work efficiently when cooking, because the frozen Nutella discs soften quickly. It helps to prepare one or two pancakes at a time unless you have an assistant.

  1. Heat a non-stick skillet over medium-low heat and lightly grease it with butter or oil.
  2. Scoop about 1/4 cup of batter onto the skillet and spread it to a 3-inch (7½ cm) circle using the back of a spoon.
  3. Quickly press one frozen Nutella disc into the center of the batter, then use a couple of teaspoons of reserved batter to cover the disc so it is enclosed.
  4. Cook until bubbles form on the surface and the edges look set, then gently lift one edge to check that the underside is golden. Flip and cook briefly on the other side to finish.
  5. Repeat with the remaining batter and frozen discs, keeping unused Nutella discs in the freezer.

Ingredients

  • 16 teaspoons Nutella
  • 1 cup (125 g) all-purpose flour
  • 2 tablespoons sugar
  • 1 ½ teaspoons baking powder (or up to 2 ½ tsp for extra fluffiness)
  • Pinch of salt
  • 1 large egg
  • ¾ cup (180 ml) whole milk
  • 2 tablespoons (30 g) unsalted butter, melted
  • 2 teaspoons vanilla extract

Instructions

  1. Line a baking tray with non-stick paper. Form 8 mounds of Nutella using 2 teaspoons each. Tap the tray on the bench to flatten each mound into a roughly 2-inch (5 cm) disc. Freeze for about 30 minutes or until solid; keep discs frozen until needed.
  2. Meanwhile prepare the batter: sift flour, sugar, baking powder and salt into a bowl. In another bowl whisk together egg, milk, melted butter and vanilla. Pour the wet ingredients into the dry and mix gently until just combined.
  3. Heat a non-stick skillet over medium-low heat and grease lightly. Scoop 1/4 cup batter onto the skillet and spread to a 3-inch (7½ cm) circle.
  4. Work quickly: place a frozen Nutella disc in the center of the batter, press it down slightly, then use about two teaspoons of reserved batter to cover the disc. Smooth the top so the filling is enclosed.
  5. Cook until bubbles appear on the surface and the edges set, then check the underside for color and flip. Cook briefly on the second side until golden and cooked through.
  6. Repeat with the remaining batter and Nutella discs. Serve warm with strawberries, extra Nutella, or ice cream.

Notes

Nutella freezes quickly; about 30 minutes is usually sufficient to firm the discs. Keep the discs frozen until you’re ready to cook. Do not overmix the batter or the pancakes will lose tenderness. Work quickly when enclosing the frozen Nutella so it does not soften and become messy.
