Πρασόριζο. Our father was just over eighteen when he left his village in Messinia to begin the compulsory military service that many young Greek men have long experienced. Introduced in 1909, universal conscription has been seen by many as a rite of passage — a transitional period before entering adult life. For our father it was a time of new experiences, friendships and, importantly, new foods.

He began his service in Thiva, northwest of Athens, where he received his uniform and spent three months before being posted to Kastoria in Macedonia for the next twenty-one months. In Kastoria the barracks were close to an airfield and surrounded by generous fields used for training and cultivation.

Among the soldiers was a skilled gardener who convinced the officers to let him tend a large vegetable plot for the camp. While the men drilled and trained, he planted and cared for tomatoes, zucchinis, green beans and — notably for our father — leeks (praso). Leeks weren’t common in his family’s village, and this was his first real introduction to them. The garden fed the whole camp and produced dishes that became fond memories for our father, especially prasorizo.

Although our father worked in a clerical role in the camp, he often volunteered in the garden, eager to be part of the harvest. He remembers yemista and prasorizo being served regularly, and he swore he ate prasorizo nearly every day while stationed there. He also recalls short trips with local soldier-friends to nearby towns, including Edessa, where he enjoyed exceptionally sweet peaches.

When asked about his military service, he speaks without bitterness. He values the friendships, the discipline and the culinary discoveries from that time. Even today, a plate of prasorizo brings back a smile and the comforting flavours of youth and camaraderie.

Prasorizo is a simple, rustic Greek dish made with leeks (praso) and rice (rizi). Naturally vegan, it is economical, nutritious and especially popular during fasting periods. The dish highlights the mild sweetness of leeks and the brightness of lemon and fresh herbs.

How to make prasorizo or Greek leeks and rice:

This classic requires only a few common pantry ingredients and can be scaled up for larger groups. The flavors are straightforward: olive oil, lemon, dill and spring onions combine with tender leeks and rice to create a comforting, satisfying meal.

Equipment

  • Large saucepot

Ingredients

  • 1/3 cup (80 mL) olive oil plus additional for drizzling
  • 1 medium yellow onion diced
  • 3 medium leeks, diced (approximately 4 cups)
  • 3/4 cup (160 grams) medium grain rice
  • 4 cups (32 fl oz) water
  • juice of 1 lemon
  • 1/4 cup chopped fresh dill plus additional for garnishing
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 spring onions, sliced

Instructions

  • Trim, wash and cut the leeks into ½ inch slices. We cut the leek in half lengthwise and slice it into half rounds.

  • Heat the olive oil in a large saucepan, add the onion and cook about 5 minutes until soft, taking care not to brown it.
  • Add the leeks and sauté another 5 minutes, keeping the heat moderate so they soften without burning.
  • Stir in the rice and sauté for 1–2 minutes to coat the grains.
  • Add the water and bring to a boil. Cover and simmer for 20–25 minutes, stirring occasionally, until the rice is tender.
  • If after 20 minutes the rice is nearly done but still a bit firm with little liquid, add a splash of boiling water and continue cooking a few minutes more.
  • Uncover and stir in the lemon juice, salt, pepper, dill and spring onions.
  • Remove from heat and let sit, uncovered, for 5–10 minutes to thicken slightly.
  • Serve with a drizzle of olive oil and a sprinkle of extra dill.
  • Enjoy.

Notes

Leeks can trap sand and dirt; rinse them thoroughly, separating the layers if needed.

If you eat dairy, prasorizo is excellent topped with crumbled feta just before serving.
