I first shared this recipe on my other blog, A Few Short Cuts, before Moms With Crock Pots existed. It’s a simple, crowd-pleasing meal that’s easy to assemble and perfect any night of the week.
Crockpot Pineapple Chicken

Total Time:6 hours 5 minutes
Ingredients
- 3-4 Chicken breasts about 2 lb
- 1 can pineapple in juice tidbits, chunks, or rings
- 1 medium onion
- 2 tablespoons soy sauce
- 1/4 cup honey
- 1 tsp ground ginger
- 1/2 cup chicken broth
- salt and pepper to taste
Instructions

Chop the onion and spread it across the bottom of the crockpot. Lay the chicken breasts on top of the onion.

Pour the entire can of pineapple, including the juice, over the chicken.

In a small bowl, whisk together the soy sauce, honey, ginger, chicken broth, salt and pepper. Pour this mixture over the chicken and pineapple.

Cover and cook on HIGH for 4–5 hours or on LOW for 6–8 hours, until the chicken is cooked through and tender.

Serve the chicken and sauce over rice with steamed vegetables. This dish is naturally gluten free; use a gluten-free soy sauce or tamari if needed.

Short recap: place chopped onion in the crockpot, arrange chicken on top, pour pineapple (juice included) over the chicken, add the sauce mixture, and cook until tender.
There will be plenty of flavorful sauce to spoon over rice and vegetables.
Serving idea:
After the chicken is cooked, shred or slice it and mix with steamed stir-fry vegetables. Serve over rice and spoon crockpot sauce on top for a homemade rice bowl that’s tasty and lighter than many takeout options.
