Easy One-Pot Mac and Cheese

  • 1 cup sour cream
  • 1 cup cottage cheese (for a smoother texture, pulse in a food processor or blender)
  • 8 oz dried pasta
  • 8 oz cheddar cheese, grated
  • 1/4 cup heavy cream
  • Pinch of salt, black pepper, and paprika

Directions

Cook the pasta in a medium pot according to package instructions until al dente. Drain and set aside.

Return the pan to medium heat and add the heavy cream, grated cheddar, sour cream, cottage cheese, salt, pepper, and paprika. Stir continuously until the cheeses melt and form a smooth sauce.
