Ingredients

Pork

  • 3 lb pork shoulder steaks

Marinade

  • 8 tbsp minced lemongrass
  • 2 tbsp fish sauce
  • 3 tbsp white sugar
  • 1 tsp MSG (optional)
  • 4 tbsp neutral oil (avocado or similar)
  • 8 cloves minced garlic

Garnish and Veggies

  • 1 large tomato, sliced
  • 1 large cucumber, sliced
  • 1 scallion, thinly sliced
  • 4 cups cooked broken jasmine rice

Garlic Fish Sauce

  • 6 tbsp water
  • 2 tbsp white sugar
  • 2 tbsp fresh lime juice
  • 1 tbsp minced garlic
  • 1 medium Thai chili, diced (optional)

Instructions

Marinade the Pork

  1. Combine all marinade ingredients in a gallon freezer bag, add the pork steaks and seal. Marinate for at least 3 hours; overnight yields the best flavor.
  2. Remove the steaks from the bag and discard excess marinade. Remove any large lemongrass pieces that cling to the meat before grilling.

Make the Garlic Fish Sauce

  1. In a bowl, whisk together the water, sugar, lime juice, minced garlic and diced chili (if using) until the sugar dissolves. Adjust sweetness and acidity to taste.

Grilling

  1. Preheat the grill to high heat. Grill steaks over direct heat until cooked through and nicely charred, or until an instant-read thermometer registers 165°F (74°C).

Serving

  1. Serve the grilled pork with sliced tomato, cucumber, jasmine rice and the garlic fish sauce. Garnish with sliced scallion if desired.
