Vietnamese Lemongrass Porksteaks

- 1 Gallon Freezer Bag
- Knife
- Cutting Board
- Bowl

Ingredients
Pork
- 3 lb pork shoulder steaks
Marinade
- 8 tbsp minced lemongrass
- 2 tbsp fish sauce
- 3 tbsp white sugar
- 1 tsp MSG (optional)
- 4 tbsp neutral oil (avocado or similar)
- 8 cloves minced garlic
Garnish and Veggies
- 1 large tomato, sliced
- 1 large cucumber, sliced
- 1 scallion, thinly sliced
- 4 cups cooked broken jasmine rice
Garlic Fish Sauce
- 6 tbsp water
- 2 tbsp white sugar
- 2 tbsp fresh lime juice
- 1 tbsp minced garlic
- 1 medium Thai chili, diced (optional)
Instructions
Marinade the Pork
- Combine all marinade ingredients in a gallon freezer bag, add the pork steaks and seal. Marinate for at least 3 hours; overnight yields the best flavor.
- Remove the steaks from the bag and discard excess marinade. Remove any large lemongrass pieces that cling to the meat before grilling.
Make the Garlic Fish Sauce
- In a bowl, whisk together the water, sugar, lime juice, minced garlic and diced chili (if using) until the sugar dissolves. Adjust sweetness and acidity to taste.
Grilling
- Preheat the grill to high heat. Grill steaks over direct heat until cooked through and nicely charred, or until an instant-read thermometer registers 165°F (74°C).
Serving
- Serve the grilled pork with sliced tomato, cucumber, jasmine rice and the garlic fish sauce. Garnish with sliced scallion if desired.
