I’ve long enjoyed a Cranberry Fluff Salad that became a holiday favorite, but when I found two unopened bags of marshmallows in my pantry after the holidays, I decided it was time for something new. Fresh cranberries were impossible to find in late January, so I swapped in raspberries and added a fun twist: chopped Oreos. The result is a fluffy, slightly tart dessert-salad hybrid that’s perfect for gatherings or a Valentine’s Day treat.

Ingredients

  • 12 ounces frozen raspberries thawed
  • 3 tablespoons sugar
  • 8 ounces Cool Whip (or 2 cups whipped cream with 3 tablespoons sugar)
  • 16 ounces mini marshmallows
  • 1 cup fresh raspberries
  • 10 Oreos chopped

Instructions

  1. Stir the thawed frozen raspberries with the sugar until the fruit softens and loses most of its shape. If needed, microwave briefly to soften, then chill if they become warm.
  2. Mix half of the Cool Whip into the raspberry mixture until combined, then gently fold in the remaining Cool Whip.
  3. Fold in the mini marshmallows, fresh raspberries, and chopped Oreos until just combined.
  4. Cover and refrigerate at least 1 hour before serving so the marshmallows and Oreos soften slightly.
